St. Patrick's Day Lucky Charms Rice Krispie Treats

St. Patrick's Day in Savannah is a huge celebration—something that I've come to embrace as the years go by, calling this city home. I wanted to find a Rice Krispie treat recipe using the marshmallows from my beloved Lucky Charms cereal to make a festive St. Patrick's Day treat. After searching and searching, I came up empty, finding that most recipes use the entire box of Lucky Charms cereal. Call me traditional, but I was not about to substitute Rice Krispies for a Rice Krispie treat!

Enter Amazon. It's 2024, and with the luxury of Amazon, we seemingly have everything at our fingertips, including bags of Lucky Charms Marshmallows. I quickly ordered, and after a thorough taste test, I concluded that these marshmallows were, in fact, the real deal.

So, here you have my St. Patrick's Day Lucky Charm Rice Krispie Treat recipe—a traditional Rice Krispie treat with added St. Patrick's flair.

Ingredients:
  • 10 tablespoons of butter
  • 1 and 1/2 bags of mini marshmallows
  • 1 regular box of Rice Krispie cereal
  • 1 bag of Lucky Charms marshmallows only
  • A heavy pinch of salt
Instructions:
  1. In a large pot, melt 10 tablespoons of butter and 1 1/2 bags of mini marshmallows over low heat until the mini marshmallows and butter are completely melted and the mixture is smooth. Remove from heat.

  2. Add the Lucky Charms marshmallows to the Rice Krispie cereal. Mix gently, ensuring the cereal is evenly coated with the colorful marshmallows.

  3. Gradually fold the marshmallow and cereal mixture together. Be gentle to maintain the distinct shapes of the Lucky Charms marshmallows throughout the mixture.

  4. Enhance the sweetness with a heavy pinch of salt. This helps cut the sweetness in the best way!

  5. Transfer the mixture into a greased pan. The key trick here is to not press down too much! Just ever so lightly to form a square. Press too much and you'll get (in my opinion) too dense of a treat.

  6. Allow the treats to cool and set for at least an hour. Once set, cut into squares and serve to your friends and family.

Store in an airtight container for up to 5 days!
